Virual exercise is a reality at club

The south west’s leading health club has completed a significant upgrade that means members and guests can take part in a series of state-of-the-art ‘virtual’ and ‘on-demand’ classes.

Complementing a new range of live, instructor led classes, theclub at Cadbury House in Congresbury has invested £70,000 in its main and spin studios. The result means it can now offer more than 230 classes a week to its members, before it could only provide around 80 classes per week.

The reason for the significant increase is because around two-thirds of what’s on offer are computer-generated classes.

Members attend a class like normal but are taken through their workout by a virtual instructor who is projected onto the wall in front of the class.

Also, if a member wants to do a workout which is not on the timetable, they can literally turn up, set the class they want to undertake and press go themselves.

It means members have total flexibility on what they do and when they do it and fits in with their busy lifestyles.

Mehmet Kandemir, general manager at the multi award-winning venue said: “We’re constantly looking at ways in which we can improve our members’ experience so that they can maximise their time and get the most out of their membership.

“This new range of classes has opened up significantly the amount of time the new-look studios can be used as they are not reliant on an instructor being present.

“Conscious that not everyone will be comfortable with a virtual instructor, we have also increased the number of live classes, so again there is more variety and choice.

“Another significant addition is more children-based classes.

"This means parents can attend their own class while at the same time their son or daughter can be doing a class next door.”

The new classes and equipment comes from the Les Mills range and includes Les Mills RPM, CXWorx, Body Combat, Body Attack and Sufferfest cycling, as well as the new children’s class Born to Move.

Mehmet added: “Running more -off-peak virtual and on-demand classes gives our members more options.

"It allows people working shifts or parents who in the past might not have been able to make it before, can now enjoy a workout whenever it suits them.

“Around 10 years ago we wouldn’t have been able to do this but advances in technology means we can optimise our studio space and give our members more choice.

“Initial feedback has been really positive and the introduction of these new classes once again places theclub at the forefront of health and wellness.”

Come dine with Marco

Restauranteur and chef Marco Pierre White is to attend a special Q&A session at the south west’s leading four-star hotel, where guests will be able to hear about how he first started cooking, ended up in London and became the youngest chef ever to win three Michelin stars.

Taking place at Cadbury House in Congresbury on Tuesday, December 3, those who want to see Marco in person and listen to what drove the man who many believe to be the greatest ever UK-born chef, will not want to miss out on this special one-off occasion.

And with only three weeks before Christmas it’s also seen as an ideal way for people to celebrate the festivities and maybe even pick up some top tips on how to cook the perfect Christmas dinner!

The North Somerset boss of Black and White Hospitality went to the place this week to collect a training award.

Set up by Nick Taplin and celebrity chef Marco Pierre White in 2013, Black and White Hospitality operates nearly to 50 MPW franchised restaurants nationwide and includes eight distinct concepts and employs more than 2,000 people.

Nick was presented the Princess Royal Training Award (PRTA) by HRH The Princess Royal at a special event at St James’ Palace.

The awards were established by global skills development body City & Guilds and recognises employers with outstanding training and development programmes that have had a direct impact on business performance.

Nick who is chairman and CEO went with Jennie Mackenzie, head of training and development and managing driector Brandie Deignan.

Black and White Hospitality was recognised for exceptional dedication to training, upskilling and reskilling of its workforce.

Crucially, it was able to prove that the training had a substantial impact on its organisation and people.

Nick who began his career as a publican in Wrington was the brains behind the development of Cadbury House Hotel into the four-star business it is today.

He said: “This has been an incredible journey and to rub shoulders with some of the country’s biggest businesses shows how far Black and White Hospitality has come in a relatively short period of time.

"To receive this award is testament to the commitment and dedication of the whole Black and White team.

ON THEiR BIKES: A team of 50 riders all linked to one of the UK’s fastest growing hospitality businesses completed a gruelling bike ride in aid of PROPS, a Bristol-based charity which provides a range of services, opportunities and support for those with learning difficulties. Tackling the mountains of Mallorca, the group, which was headed by Nick Taplin and Shezan Aslam. of Black and White Hospitality, rode close to 250 miles while ascending 12,000 feet on some of Europe’s most renowned cycling roads including the infamous Sa Calobra. The firm, whose main partner is Marco Pierre White, raised morer than £40,000 on this latest charity fundraiser taking the total amount raised by the firm in excess of £175,000 in the past four years. Nick said: “Once again everyone who took part excelled and pushed themselves to the limit. When you consider that Mallorca is used by all the professional cycling teams for their training and by riders such as Chris Froome, Bradley Wiggins and Geraint Thomas demonstrates just how tough the terrain is."

The Day of the Dead party

A traditional Mexican celebration which honours the dead is heading to Cadbury House and it is oh so scarey.

On Saturday, November 2, The Day of the Dead Halloween party is set to lure the spirits of loved ones so that family and friends can celebrate their lives with music and food and get dressed up in spectacular costumes.

The four star Congresbury hotel is now finalising plans to transform its Great Room where the atmosphere will take on a carnival theme and guests will be able to party the night away while celebrating the souls of the departed.

A national holiday in Mexico, the carnival-style celebration, which is also known as Dia de Muertos, has now become popular outside of its spiritual home and gained even more attention after it appeared in the opening sequence of the last James Bond film, Spectre.

The party will include a three-course meal – including a taco from The Little Taquero Van - while staff will either wear spectacular calaveras, skull-styled masks or have their faces painted.

Adding to the carnival theme a traditional mariachi band called Mariachi Fino, will roam the house playing popular music from their native Mexico and Latin America.

With its gothic house, the venue provides arguably one of the best backdrops for any Day of the Dead or Halloween celebration, and the team will be encouraging guests to really go to town on their own costumes.

“Despite its name, it’s meant to be very much a happy occasion and our celebration will take on a humorous tone.

Mine host Marco Pierre White

Fans of fine dining and Marco Pierre White can meet the great man himself as he makes one of his regular visits to his steakhouse restaurant at Cadbury House in Congresbury for both a lunch and dinner service.

Regarded by many as the greatest UK chef of all time, White will be popping into his Steakhouse Bar & Grill on Tuesday, August 20, where he’ll meet and greet diners, sign copies of his books and talk about the brand-new steakhouse menu.

Krisztian Komar, restaurant manager said: “It’s fantastic when Marco comes to visit.

"Our customers love meeting him and it’s great for staff morale as well.

"Marco has a lot of charisma and is wonderful with the public so we’re really looking forward to welcoming him back.

“There’s always a real buzz of excitement when he visits, and he’s always interested to know how his menus have been received by diners.

"People don’t realise how hands-on and involved he is and are often surprised to see how much he cares about making sure the menu and restaurant is spot on.

“The new steakhouse menu includes a host of exciting new dishes that pays homage to the culinary giant’s ethos of ‘affordable glamour’.”

While steak remains at its heart, some intriguing twists on existing dishes have been included and there are also more vegan and vegetarian options which caters for the rise in people turning to vegetable and dairy-free based diets.

On the hors d’oeuvres selection one of the new additions is a delicious charcuterie called Perinelli and Mr White’s English Cured Meats and follows a chance meeting between White and Giuseppe Perinelli, who runs his own meat curing business in Penge, South London.

Two new soups have been added to the hors d’oeuvres section including the appetising Governor’s French Onion Soup and a Cream of Butternut Squash.

Those who fancy something a little lighter can choose between two new salads including the Lofthouse Farm Salad which includes Wiltshire ham, eggs and Gruyere cheese or the Belgian Endive and Blue Monday Salad which includes a fresh poached pear, candied walnuts and merlot vinaigrette.

Of course, steak remains the star, with the menu maintaining a sumptuous selection of sirloin, ribeye and fillet, all supplied by Royal Warrant butcher Campbell Brothers.

Three eye-catching signature fillets have been added including the Fillet of Beef a la Forestiere, Fillet of Beef a l’escargot and Fillet of Beef au poivre while a beautiful Grilled Delmonico Steak – which derives its name from Delmonico’s restaurant in New York City - has been added and is perfect for those looking to share.

Accompanying the steaks are a new selection of five delicious ‘toppings’

such as the Fried Double Yolk Eggs Holstein and Bordelaise Butter and are regarded by the gastronomy heavyweight as being the ideal accompaniment to the 28-day aged meat.

Burger fans won’t be disappointed with the introduction of The Banksy BLT, The Keith Floyd Bristol and The John Lennon while new catches on the fish board include Fried Fillet of Cod and Grilled Swordfish Steak a la Nicoise.

Two new dishes have been added to the vegetarian and vegan selection including a Gnocchi in fresh tomato sauce and Grilled Aubergine a la niçoise.

Hilton brand mark 100 years with 'random acts of kindness'

One of the south west’s leading four-star hotels handed over a £1,000 cheque to the Children’s Hospice South West as part of Hilton’s 100th birthday celebrations.

Staff from DoubleTree by Hilton, Cadbury House visited Charlton Farm at Wraxall where they were shown around the facilities before handing over the money.

The hospice provides care for children who have life-limiting conditions. With more than 1,000 families with life-limited children in the South West, the charity provides care and support for more than 450 families from the point of diagnosis through to bereavement and beyond, or for as long as the family needs it. 

Called Random Act Of Kindness the donation formed part of a global celebration of the centenary of the founding of the international hotel group. 

Cadbury House general manager Mehmet Kandemir said: “When you realise how little funding the hospice receives from the government goes to show that every donation helps enormously this amazing charity and we were delighted to raise and give it the £1,000. 

"It’s such an inspirational place we will now aim to raise a further £5,000.” In addition to the donation other random acts of kindness included hotel guests having their bills paid for, free dishes and drinks in the Marco Pierre White Steakhouse Bar & Grill and chilled Prosecco as they checked in.

“When you think about all the Hilton hotels across the world all doing similar activities makes you realise how big an impact the brand has on the communities in which they are located."

“We not only employ a lot of people from the local area but use many local suppliers.

Who killed Katie Crewe?

Wannabe Hercule Poirots from across the South West can take part in a night of murder mystery at what is arguably the most atmospheric venue in the region.

With its gabled exterior, the gothic looking Cadbury House in Congresbury wouldn’t look out of place in an Agatha Christie film and is the setting for what will be a super fun night of murder and mystery solving.

On Friday, June 7, eagle eyed detectives are now being invited to see if they can find the felon at what has become one of the venue’s most popular and regular events.

The setting for this particular night of dastardly deeds is the 1960s, a time when the Beatles ruled to music world, England won the football world cup and the Cold War was at its most frigid.

At the same time Crewe’s Carnival rides was the most successful travelling funfair in the South of England, but in amongst the glittering light of the dodgems, Waltzers and the sideshows there was much unrest!

First there was the romantic interest of at least one young man, who loved Katie Crewe. Then there was the jealousy of some who envied Katie Crewe. From inside the family there were arguments, some of whom hated Katie Crewe.

And the fierce competition from rival operators resulted in some tricking Katie Crewe.

A culmination of many things yet unsolved, the question that will be on everyone’s lips on June 7 will be, who killed Katie Crewe?

Father's Day is on Sunday, June 16 this year and what better place to celebration than lunch at Marco Pierre White Steakhouse Bar and Grill.

DoubleTree by Hilton, Cadbury House in Congresbury has the day covered with a special MPW menu.

The renowned restaurant is now taking bookings for the occasion where families will be able to enjoy either a two-course or three-course dinner including a special gift from Marco - a bottle of Marco’s Governor Lager, a full-bodied 4.7 per cent pils-style lager, that been brewed by Manchester-based JW Lees.

Top acoustic band at Cadbury House

One of the UK’s foremost acoustic bands is heading to the south west’s leading four-star hotel where they will play a set of classics from the 60s, modern day covers as well as songs from their own albums.

Fans of The Lipinski Brothers can now book tickets for Friday, July 19, at Cadbury House in Congresbury, North Somerset.

Made up of brothers Alex and Adam, their extensive repertoire features songs by the likes of The Beatles, The Kinks and The Rolling Stones as well as more modern artists such as Crowded House, Kings of Leon, Oasis, Stereophonics, The Killers and Mumford & Sons.

Having received rave reviews from some of the country’s leading music media, Alex’s voice, which has been described as having the ‘raw rockability of earliest Elvis, is set to wow fans at the popular venue which provides the perfect setting for live gigs.

One of the country’s best known and most loved soap opera stars visited the South West’s leading four-star hotel where he hosted an afternoon tea where guests were treated to his own brand of gin.

Adam Woodyatt, who is one of the longest cast members of the hit small screen TV show that depicts life in London’s east end, made the special one-off visit to Cadbury House in Congresbury, North Somerset.

At a special afternoon tea, Adam chatted about his gin journey while the 50 guests were served three gin-based drinks using the soap opera star’s NEAT Gin, which he and his wife Beverley have developed just under the last two years.

A versatile London Dry Gin, it contains eight botanicals which have been carefully balanced to work in harmony, giving a nose that is both floral and woody.

The mouth feel is smooth and creamy giving notes of citrus and spice with a lengthy finish.

On arrival guests enjoyed a delicious cocktail, perfect for the summer called English Garden Fizz and included NEAT Gin, soda water, elderflower cordial and prosecco.

After tea, they were then served a straight shot which included a dash of water, ice and cucumber garnish and demonstrated the full flavour of the gin. Finally, guests were treated to the perfect serve which had plenty of ice, aromatic tonic and orange peel.

Guests were also set a competition by Adam to guess the eight botanicals used in the drink with those getting the most correct winning a free bottle.

Adam said: “It’s always great to get out and about and chat to guests

and explain all about our gin journey.

"The setting was ideal and meant I was able to spend some quality time with everyone who came along.

“Our story is quite a simple one. We just wanted to make gin.

“Beverley and I found a 15th century recipe and used that as our starting point. There was a list of botanicals but no quantities and was like a jigsaw without a picture. We tried different combinations, constantly tasting and testing until the eleven botanicals became eight.

“It’s great that we were able to share our journey with other gin enthusiasts.

“It’s also really interesting to see if people can guess what the botanicals are. No one has ever guessed all eight and that remained the case during my visit to Cadbury House however some guests did get four.”

New seasonal Bistro menu

The bistro a Cadbury House has a new menu.

Marco Pierre White launched the new menu at his Bardolino restaurant at theclub, Cadbury House in Congresbury.

Featuring an all-day selection of authentic Italian food, coffees and Bellinis, the new menu is just as much a statement about the way in which the famed chef has eschewed the sort of fine cuisine he was once renowned, while providing what today’s discerning diners are looking for.

Marco said: “Bardolino tells you what it is - a bar and also a place to get good, simple food.

“This is the way that restaurants are going, because this is how people are living nowadays.

"They like to eat out once or twice or even three times a week, even if it is just going to somewhere casual like a pizzeria.

“People want affordable glamour, and they want some fun. I like casual. I like affordable. And I like glamour.

"We live such fast lives it is important to have some escapism, so going to your local pizzeria for something to eat or even just a coffee can be an escape.

“To me, the most important aspect of eating out isn’t the food – it’s the atmosphere, the environment, the lighting, the service. The problem with expensive restaurants is that you don’t become a regular because you can only go there on rare occasions.

“Bardolino is a place where customers can pop in numerous times a week and the new menu is a reflection of just that.”

The new-look menu is focused around Pierre White’s belief that good quality food should be an experience that is shared and enjoyed with friends and family, whatever the occasion and includes a mix of classic Italian-inspired dishes.

With the casual dining restaurant taking its name from the town of Marco’s mother’s birth, it is now hoped the updated menu will continue to attract those looking for a casual dining experience.

As you’d expect from a restaurant that has Italy at its heart, customers can expect a variety of authentic stone-baked pizzas, Al Forno pasta and Mediterranean inspired salads.

New to the starter’s menu is a delicious Crispy Butterfly Prawns Fritto Misto while new additions to the Al Forno selection includes Penne Arabiatta, chilli, cherry tomatoes, fresh basil; Baked Tuscan Sausages, cannellini beans, pomodoro sauce; Rigatoni Ragu of Scottish beef Bolognese with aged Italian cheese and also Cannelloni, spinach and ricotta with cream cheese sauce and aged Italian cheese.

The new pizzas are just as tantalising and includes Florentina Portobello mushroom, spinach, free range egg, mozzarella, fresh sage, porcini oil and the Romana with anchovies, capers, black olives, tomato and mozzarella.

Two novel burgers have been added including the Fonzi which includes pancetta, pickled cucumber and mozzarella. Not to be outdone, Marco has also added his own, aptly named The MPW which includes mustard mayonnaise, onion rings and mozzarella.

Finally, those wanting something a little lighter can enjoy the new Grilled Shrimp Avocado Caesar Salad which includes croutons and Italian cheese.

Marco added: “The new menu offers a fresh alternative, where authentic, uncomplicated food is served promptly.

“We want groups of friends to come in for a lunch or dinner. It’s not pretentious, it’s just good food, served in a great environment.”

Young Lions love Cadbury

England u21 football squad bunked up at Cadbury House Hotel during their stay in Bristol for the game against Poland.

And the young people and their officials were so impressed by their accommodation they put in a request wish in feedback to the Congresbury staff to hold all their football camps staying at the North Somerset hotel with spa, swimming pool and top-notch gym facilities.

Arriving on the Sunday ahead of the Ashton Gate international the squad and backroom staff stayed for a full week at the four-star hotel.

Sky Sports reported that Manchester City player Phil Foden impressed as a dominant England U21s but they were held to a 1-1 draw by Poland for the Thursday night game.

Having undergone a series of high-end audits by the squad’s management to make sure the venue was suitable for the Young Lions, the Cadbury House team was thrilled to host the squad which included players valued at more than £70 million.

England U21 team manager Jenni Wisdom said: “The hotel was lovely and the layout worked so well for us.

"There was a great flow and it was very comfortable, but even more than that was how great the staff were in looking after everyone.

"Everyone had a smile on the their faces and couldn’t do enough to help us. 

"We have never stayed in a hotel where we have been so cared for.

"I honestly don’t have anything to even suggest the hotel could improve on, if only we could hold all our camps in Bristol.”

Chin-chin at Cadbury House with EastEnders star Adam Woodyatt who will be toasting guests with his own brand of gin.

One of the country’s best known and most loved soap opera characters will be visiting one of the south west’s leading four-star hotel where he’ll talk about how he has developed his own specials bottle of booze.

Adam, who is one of the longest cast members of the hit small screen hit TV show will be making a special one-off visit to the Congresbury hotel on Saturday, April 13.

His on-screen character Ian Beale has been marriage five times, had two engagements called off, fathered three children and is currently the homeowner of 45 Albert Square.

In real life Adam who will be 51 in June was born in Walthamstow, married dancer Beverley in 1998 at Disney World, Florida, and the couple who live in Warwickshire have two children.

At the North Somerset afternoon tea, Ian will chat about his gin journey while guests will be served a number of drinks using his NEAT Gin.

He’ll also provide some ideas on how to make the perfect G&T along with a number of other gin-based cocktails.

Adam said: “Our story is quite a simple one.

"We just wanted to make gin.

“Beverley and I found a 15th century recipe and used that as our starting point. 

"There was a list of botanicals but no quantities and was like a jigsaw without a picture. 

"We tried different combinations, constantly tasting and testing until the 11 botanicals became eight.

“It’s great that we can now share our journey with other gin enthusiasts and I’m looking forward to visiting Cadbury House and meeting lots of guests to chat and talk about our experience.

“Gin of course has a long history with London, but it was in fact the Dutch who are thought to have really invented the spirit. 

"It was in the late 1600s that the first gin craze really took off in London and was a period where a pint of gin was cheaper than a pint of beer!

“Luckily today things are a little calmer however gin has certainly had something of a renaissance, and is now viewed as the bedrock for a huge range of cocktails and of course the classic G&T.”

A-level studies begin with Cadbury House breakfast

Backwell School sixth form students grilled staff from Cadbury House at Congresbury after enjoying a hearty breakfast on an educational visit.

The 22 students enjoyed a series of short presentations senior management and a tour of the venue with a £10 million annual turnover business.

The visit was part of their Business and Economics A-level course.

Current owner Nick Taplin has iseen more than £30 million invested in the business since he bought it back in 2003.

They were also intrigued to find out more about the type of customer the four-star hotel attracts and the benefit of maintaining and developing excellent customer service.

Additionally, they wanted to learn how the multi award-winning venue tracks and monitors the success of any campaigns which promote things such as wedding fayres, gala dinners, hotel occupancy and health club membership.

"Visiting venues like ours provides them with a vital insight into how businesses work day in, day out.

A new general manager has been appointed at the South West’s leading independent health club.

Mark Johns has taken over the running of the award-winning club and spa at Cadbury House in Congresbury, North Somerset, from Jason Eaton the former Bristol, Bath and Cheltenham professional footballer.

Mark has a wealth of experience in the health club and wellness sector and joins the popular club from DW Fitness First in Bath.

Prior to that he oversaw the running of the Ledbury Leisure Centre and swimming pool on behalf of the Halo Leisure Trust.

Working as area manager for the David Lloyd Group for five years, Mark was in also charge of the group’s Long Ashton venue in Bristol during its £2.5 million refurbishment.

Marco Pierre White is increasing the number of vegan dishes at his West Country-based restaurants.

The increase in the number of vegan dishes comes as more and more turn to the plant-based diet, and with big name stars such as Lewis Hamilton, the Formula 1 driver, and pop singer Ariana Grande both turning vegan, the lifestyle choice is becoming increasingly popular.

Helping cut obesity, blood pressure and lowering the levels of type 2 diabetes, many also switch for health reasons.

The no-nonsense chef and famed restauranteur will now roll out the new selection of dishes at his Marco Pierre White Steakhouse Bar & Grills in Bristol and Bridgwater, and Bardolino pizzeria also in Bristol.

Commenting on the availability of the new dishes Marco said: “There is a place for all types of menus and the increase in vegan-based dishes reflects what more and more customers now want. The new dishes are high in vegetables and also cereal grains and legumes.

“In the past, there was definitely a stereotype of people who were vegan but with more millennials and younger people switching to the diet, that has now completely gone.

“I went on a vegan diet once and although I’m back on what I’d call a more balanced diet, I certainly lost a lot of weight.”

While the number of vegan dishes is increasing, the one labelled the original ‘enfant terrible’ is keen to point out that it won’t compromise the rest of his menus, which will cater for all tastes and diets.

Marco added: “I learnt a lot when I was on the vegan diet and gave me a good insight into what makes a good vegan recipe. You can’t expect to get away with offering a vegetable lasagne or vegetarian moussaka as an after-thought.

“What we’ve done is develop recipes and combinations that not only appeal but cater for those who now enjoy a vegan diet.”

Starters include zucchini fritti or spiced cauliflower salad with pomegranate and coriander while the new range of mains includes avery island burger, tabasco ketchup dressed butternut squash burger and Rigatoni arabiatta, pomodoro sauce, fresh red chilli.

Desserts include almond rice pudding with vanilla poached apricots and peanut butter and jelly Monte Cristo sandwich fried finished in cinnamon sugar, served with sorbet.

Marco added: “Sitting alongside dishes for those who are not vegan means groups of friends and family who have a variety of diets can enjoy a nice meal without feeling as if they are being singled out.

“I’m in the business of feeding people and feeding them well in a nice environment with excellent service and that is what I think we’ve achieved with the new range of vegan dishes.”

West Country favourites The Wurzels will be making their long-awaited return to Cadbury House this spring.

Performing their popular West Country classics, such as I am a Cider Drinker, Blackbird, I’ve Got a Brand New Combine Harvester and Drink Up Thy Zider, the event is on Saturday, April 27, within the stunning setting of the luxury four-star hotel.

In keeping with the West Country theme, the Wurzel-inspired night will also include a delicious Hog Roast and specialist guest ciders from all over the region for visitors to enjoy.

Cadbury House caring in community

The south west’s leading four-star hotel has raised more than £2,500 for a local charity that employs and trains adults with learning disabilities (LD) within the catering, customer service and hospitality sectors.

Operating from a fully restored and refurbished Brunel listed station building on a busy railway station in North Somerset for the past eight years, the team behind the Strawberry Line Café project in Yatton now want to expand their operation with the launch of The Hub.

With few opportunities existing to meet the demands for meaningful and supportive work experience across the region and with the current Strawberry Line Café premises having limited capacity, the plan behind The Hub is to source local premises that will give as many local people with LD a chance to try and gain essential skills, which will lead to employment or meaningful work experience in another business.

The money raised so far by Cadbury House in Congresbury, will now go towards producing a 90-second film which will be used to raise awareness of the project for funding applications while also being shared with local employers who might want to get involved.

Strawberry Line Café director Ann Ramsey, who is originally from Nailsea, said: “We are very grateful for the support of everyone at Cadbury House and look forward to working with them to make our project a reality.

"Partnering with such a high profile and highly regarded employer will also make a big difference the future success of the café.”

Spa skills shared

A therapist who began her career as an apprentice at one of the region’s leading spas has now become mentor for the next generation of beauticians.

Starting seven years ago as a weekend work experience student, Ella Williams, who now works full time at thespa at Cadbury House in Congresbury in North Somerset, is supervising the latest intake of therapists as they work towards their own qualifications.

Ella started back in 2011 while studying for her Level 2 NVQ in Beauty Therapy at Weston College, going on to attain her Level 3 NVQ while working as a full-time apprentice at thespa.

Her career has now gone full-circle as she has now started supervising the newest recruit, Charlotte Rabone, as she herself embarks on gaining her qualifications as well as valuable hands-on experience.

Ella said: “It doesn’t seem that long ago when I first started here at Cadbury House, so it’s amazing to think that I’m now helping the next generation of beauty therapists work towards their own qualifications.

“When I started my apprenticeship it really helped build my confidence. I learnt an awful lot and gained brilliant experience at an award-winning spa. I was hugely grateful for the opportunity and would encourage others to follow the same route

“It’s also great that I can now help Charlotte and guide her while she too works towards her qualifications.”

Spa manager Michelle Ferguson said: “It’s fantastic that Ella is now helping out the next generation, having come from an apprenticeship background herself.

“Doing an apprenticeship means you have to perform.

"If you’re in the workplace you’ll be meeting and serving paying customers so everything has to be right - this means there is a real pressure to perform but I think this is when people learn the most.

“Gaining the hands-on experience really gives people the confidence and knowledge they need to progress. Charlotte has been a great addition to the team who gets fantastic feedback from her clients and I know will do well and we wish her all the best.”

MPW tasty Christmas leftovers

At a notoriously stressful time even the most experienced home cooks can become overwhelmed by the amount of work there is to do over Christmas.

For those taking on the mammoth task of feeding friends and family during the festivities, straight-talking chef and restaurateur Marco Pierre White, has come up with the perfect recipe that will keep the celebrations going by using the tasty Christmas dinner leftovers.

 For him, Christmas is all about celebrating with family and friends and being able to relax. And as you’d expect from the one dubbed the original ‘enfant terrible’, the tasty treat is a characteristically no-nonsense idea that is set to please all.

 And one of the easiest and tastiest ways to enjoy the turkey leftovers is, according to Marco, to knock up a curry that’s as heart-warming as it is tasty. Fresh and full of flavour, after a Boxing Day stroll, coming in to the aroma of Indian spices is a fantastic way to feed the family.

 Marco’s Curry Sauce

  • 475g eating apples washed/cored/sliced finely

  • 300g bananas sliced

  • 1.4kg pineapple peeled/cored/sliced

  • 80g butter

  • 80g plain flour

  • 100g onion peeled/finely chopped

  • 40g hot madras curry powder

  • 40g mild madras curry powder

  • 20g turmeric

  • 100g desiccated coconut

  • 2 Knorr chicken jelly pots into 2litre hot water to make chicken stock

  • 4 bay leaves

  • 10g fresh thyme

  • 6 cloves

  • 2g salt

Add 200g leftover cooked turkey per portion to 150ml of finished curry sauce and garnish with diced fresh mango and coriander, serve with rice/naan

 

Method for sauce 

  • Melt butter in heavy based pan on low heat and sweat onions until soft no colour.

  • Add all fruits and cook down for approx. 10mins.

  • Lightly brown the flour in a hot oven.

  • Sprinkle the browned flour and all spices and coconut and mix well with a spatula.

  • Pour in the chicken stock and bring to boil then simmer for 1hr, skimming the surface if necessary.

  • Add bay leaves, thyme and cloves after 10mins of cooking time has passed.

  • Season with salt to taste.

  • Liquidise in small batches and pass through a sieve.

Reheat when needed and add cooked turkey leftovers

New face at health club & spa

A new ops manager has joined the South West’s leading health club and spa.

Silviu Prioteasa, aged 36, has joined the management team at theclub & spa at Cadbury House in Congresbury, North Somerset.

Originally from Romania and with a degree in PE and Sports Management from the University of Pitestri, Silviu came over to the UK in 2006, where he undertook an English scholarship at Cambridge.

Wanting to improve his English further he then moved to Street in Somerset.

It was here that he started to settle, and having previously played professional football back home, got involved with refereeing matches across Somerset.

With his impeccable English, Silviu started work for the Dexter Restaurant brand after which he became F&B assistant manager at the Ramada Hotel in Bristol during its rebranding into a DoubleTree by Hilton.

He then moved on as operations manager at the Holland House in Bristol before joining the health club at Cadbury House.

Silviu said: “I first visited the club at Cadbury House about two years ago when I came here with my wife for the day. I remember then her commenting on what a fantastic place it is and how good the facilities are.

"When I said I was going for the ops manager position, she knew instantly where I meant.

“It’s that sort of impression I’ll be looking to build on not only with current members but also those considering joining.”

Attracted by the autonomy and independence of the club, Silviu was also impressed by the high-end equipment which the members use to maintain their health and wellbeing.

And having played professional football not only in his native Romania but also the United Arab Emirates and Bahrain, Silviu knows what it takes to create a world-class facility and believes that is exactly what the club has on offer.

He added: “The standard of equipment and facilities available here at Cadbury House are of the highest quality. I know how good the equipment is as I have personally used a lot of what’s available when I was training during my footballing days.

“theclub is highly respected across the health club sector. It is certainly one of the most pioneering so I’ll be looking improve on what’s already here.

Steak remains at the heart of the new menu with cuts including fillet, rib-eye and Chateaubriand and there is a range of exciting new main courses, starters and desserts to try, all of which reflect Marco’s passion for simplicity.

Among the various eye-catching starters is classic eggs benedict with Woodall’s ham, while Marco himself singles out Mr White’s scotch egg with Colonel Mustard sauce as a particular favourite.

There are also a number of new additions to the soups and potages selection including Mr White’s pea and ham soup and roasted tomato soup with fresh basil.

The range of main courses is equally eclectic and again harnesses Marco’s love for classic dishes cooked to perfection.

Diversity is a theme throughout the menu, with stand-out plates including Wheeler’s haddock fish cake with poached hen’s egg and Connaught’s shrimp curry, both perfect for fish lovers.

Also on the mains board is a delicious honey roasted bacon chop; classic chicken Kiev while the croustade of eggs maintenon maxim’s and creamy polenta with wild mushrooms are ideal for vegetarians.

Guests can also find indulgence with a dessert menu that includes warm treacle tart with clotted cream and Marco’s rice pudding with sherry-soaked prunes.

Marco said: “Eating out should be all about affordable glamour and that’s at the very heart of this new menu.

"People want to go out and have fun and I like creating good food that has excellent service in a good environment.

“Today, it’s not about invention, more about refinement.

"I like to keep things simple and generous and that forms the basis for this new menu.”
